Guild Wars 1 and 2 are separated by 250 years of change, whereas the storyline in GW2 is following along with the real world timeline (meaning it's only been a couple of years or so since the first "people" appeared in GW2). Perhaps the Kodan need longer to become a dominant race.
Other than racial elites (which are weaker than profession-specific elites), there are no differences in regards to race. Although the Hounds of Balthazar on a Ranger is pretty friggin neat. I would like to know, though (so I don't screw anything up later) if your choice of race has any impact on your choice of profession. In games like FFXI, there were slight stat differences, though those could be overcome (I was a Taru Dragoon); in others like WoW, you are actually limited to your professions sometimes based on your class.

Asura always has the best animations. Charr usually runner-up. Human is best for roleplaying obv but has the most vanilla animations. If you are looking for flavor and uniqueness, play the non-humanoid races. If you are looking to identify with your character more closely you'll probably want to be a furless bookah.
For most armors the human race has the most options for good looking or proportional armor as they usually start out designing armors with the human model. I'd assume this goes for medium armor too. And Char's (from what I've only see/heard) have a hell of a time with armor. Especially light and butt cape medium.
